Mom's Soda Bread
There are many imitators, but no one can come close to my Mom for the sheer excellence of her soda bread. You can try it yourself with this recipe.
Preheat oven to 350°F.
Combine:
- 2 c. Flour
- 1 c. Bisquick
- 1/2 c. Sugar
- 1 tsp. Baking Soda
Separately Mix:
- 2 c. Buttermilk
- 1 Egg
Mix wet and dry.
Add:
- 1/2 box of raisins (about 8 oz.)
Grease and flour wide pan. After about 15 minutes of baking, cut a cross in the crust, and cover loosely in tin foil. Bake for a little over 45 minutes more, until a clean dry knife inserted in the middle comes out mostly clean. Let cool a few minutes. Remove from pan.
